Sure: use "Tools->Clipping planes" in Gmsh to interactively clip the
post-processing view(s) and/or the geometry and/or the mesh.
If you want to actually cut the view (i.e., generate a new view that
contains only a subset of the elements), use "View->Plugins->Cut Plane"
and set "Extract volume" to +1 or -1.
